Cook Meredithʼs Mashie Burgers

Serves 4-6 people
( Because we are cooking something from leftovers, amounts noted are somewhat
2 c. leftover mashed potatoes
1/4 c. flour
salt and pepper to taste
dash of chile powder, or a pinch of tarragon
1/4 c. each of any combination of the following:
grated cheese, finely chopped green onions,grated carrots, diced red
pepper,chopped mushrooms, finely chopped zucchini, ground walnuts, or chopped
cooked green beans.
Mix the mashed potatoes with your choice of chopped veggies, nuts, or whatever
appeals to you. Add the egg, flour, salt and pepper and herbs. Mix well.
Form mashie mix into patties.
Cook patties in olive oil over medium heat until golden
brown. Turn only once. Serve piping hot with hot sauce, horseradish sauce, ketchup,
curry sauce, sour cream, or none of the above.
